Recipes
Sometimes I can be a disaster in the kitchen.
I attribute it to my inability to follow directions.
But! There is hope. I’ve {successfully} made these recipes, and so can you!
Breakfast
Bread
- multigrain bread
- pizza dough (I like to substitute 2 c whole wheat flour for 2 c white flour)
- pumpkin bread
Dinners
- mojito chicken
- shrimp tikka masala (I use chicken instead)
- southwestern lime chicken
- chicken cashew veggie stir fry
- tortilla casserole (I like to call this “Mexican lasagna”; and I only use the casserole ingredients I have on hand – so if you skip an ingredient or two on this one, it should be okay. Unless the ingredient you’re skipping is tortillas or cheese. Then you might be in trouble.)
- salsa chicken & black bean soup (uses a crockpot. which, in my opinion, might be the best invention ever made.)
- thai ground pork salad
- northern thai sausage
- bombay sliders with garlic curry sauce
- spinach-stuffed shells (I substituted cottage cheese for ricotta because I don’t like the texture of ricotta; I also will leave out the half & half if I don’t already have it on hand.)
- chicken enchiladas with green salsa
- grilled fish tacos & cilantro-lime rice
- chicken potpies with puff pastry
- pineapple marinated pork chops (another fun crockpot recipe!)
Desserts
- chocolate covered pretzels
- pound cake
- candy-covered chocolate-covered caramel-covered apples
- pumpkin bars

This is so great. I love the format of it and may have to try something similar on our blog. I’m feeling inspired. =)
